Instant Cucumber/Zucchini Dosa/Pancake-Vegan


Cucumber dosa....instant dosa.....zucchini pancakes.



Instant dosa is something where no fermentation is needed unlike plain dosa where after grinding it should be kept for 8 to 9 hours for fermentation.

Instant cucumber dosa can be grinded and  cooked immediately and above all its Vegan.

The best part is there is no need to drizzle oil on the dosa.....just keep greasing the tawa after each dosa.


I had posted this 2 years back, I though of reposting it when I found that it had just 312 views and just one comment from my cousin Ponnu.....and this is one of my favorite breakfast.....and a great recipe.

Making this is so easy....all you have to remember at night is to put raw rice in water and check whether there is a cucumber or zucchini in the refrigerator.

Come morning ....you just wash the rice and pop it in your grinder, add the jeera, onion, green chilly, little rice, jaggery or sugar, salt, chopped cucumber(including the seeds)  and coconut.. Just grind it...sometimes you might need a little bit of water.....grind it .....do not grind it finely....just coarsely.....and the batter should be thick.

Transfer into a bowl and add the finely chopped onion, green chilly, and curry leaves....mix well. Heat the dosa tawa ...grease it....


Simmer the fire....and pour 2 ladleful on the hot tawa.

Cover it with a lid.....and cook on low flame for 2 min.


And open the lid...

Then flip to the other side and let it stay for a min or two.


That's it instant cucumber dosa is ready.
Serve with pickle or chutney.

Note: This dosa taste best while still warm, when I make I put in the casserole so that it stays warm/hot while I finish making the entire batter.
