Strawberry Slab Pie. Slab pies makes you happy because it is so easy and fun to make! Seriously, this is something you should try out! Slab pie filled with strawberry jam is one of the easiest dessert, I love to make.

The best thing about slab pies are the ease at which it can be made and served. For those who have not heard of slab pies; its simply a pie that you bake in a baking sheet or on a baking mat like I did. Unlike a tart, it is fuss-free and easy to put together.

I took the tart base recipe of my Rustic Apple Tart. Spread out in rectangle, trimmed the edges and slathered some strawberry jam on one side of the rectangle, closed them and pressed the sides with a fork....and pricked them all over....and baked!

I have this fetish for strawberries and strawberry jams are my comfort binge! You can try with fresh strawberries if you have them around (I envy you); just slice or chop them up (about 1 cup), mix in 2 or 3 tbsp of sugar and a tbsp of corn starch and a dash of cinnamon powder....mix all them up...and fill it in.

I like to dust powered sugar on top of my baked goodies, it kinda make me double happy! Oh! please allow them to cool down completely because pies are meant to be cooled and then cut! otherwise, you will be in a big mess, so have patience and control with pies around!

These slabs were sliced and served to my kids.....and all I could say was Amen! Sometimes kids can be very greedy....atleast when it comes to pies, ha!

So, did I convince you enough to make one??

Remember, I mentioned that these baking mats were gifted by my bloggy friend Renu (thank you). I started using them wherever "bakingly" possible. Aha! I just created a new word "bakingly"!

Now, if you do not have one, do not panic; you can either find them in here or can make a parchment (butter paper) lined baking pan.


Baking Time: 15 to 20 min.
Method:
Preheat oven to 180 degree C.
I used my food processor to make the dough; you can also make the dough with your hands (just crumble the butter and knead into the flour with your fingertips till it resembles breadcrumbs.
Here, I just dunked the butter, salt, sugar, and flour into the processor....and pulsed for 50 sec.

Through the feeder, poured in 1 to 3 tbsp of ice cold water....and ta! da! you get the dough in about 2 to 3 pulse later.
I just gathered the dough into the counter top, and gave it a nice knead with my hands...I need to workout them more!
Then I placed it in a parchment paper ....on one side....so there is some paper to be pulled over.

Covered it with the other end of the paper. And with my rolling pin, I rolled it out into rectangle (as much as possible) and trimmed away the sides with a pizza cutter. The pie base is actually sandwiched inside the parchment paper.
This way, it is easy to roll out and no sticky dough or flour mess!


I then just pulled out the pie pastry carefully and placed into the silpat baking mat, and filled the strawberry jam on one side, I just simply pulled over the other end of the pie pastry over the top of the filling...easy peasy!
Simply give an egg wash on the sides, so that they will seal perfectly when closed.


Once closed, give another egg coat (wash) all over the top.
Then with a fork, I made them look pretty on the sides.....and pricked them all over the top, this is to let the steam out while baking or else...it will burst open :)
I popped them into preheated oven for about 15 to 20 min....and allowed them to cool down....patience is the mantra here!
Once cooled down dust with powdered sugar, though some prefer sprinkling sugar over the egg washed top before baking.....you can take your pick on that!

Cut into your desired shape and serve!

  INGREDIENTS

  • Crust:
  • Flour: 1 cup
  • Cold unsalted butter: 1/2 cup, 100 gms
  • Sugar: 3 tbsp
  • Salt: A big fat pinch
  • Ice cold water: 1 to 3 tbsp or as needed
  • Filling:
  • Strawberry Jam: 3 to 4 tbsp
  • For the glaze:
  • One egg beaten for egg wash
  • Powdered sugar for dusting


  METHOD:

  1. Preheat oven to 180 degree C.
  2. Mix flour, sugar, salt and ice cold water to make a dough.
  3. Place the dough in between parchment paper and roll out into a rectangle.
  4. Transfer it carefully on to the baking mat (I used Silpat)
  5. Spread the strawberry jam filling on one side and pull over the other end of the dough over it.
  6. Press all 4 sides with fork so that it is sealed.
  7. Brush with beaten egg on top and prick all over the top with a fork.
  8. Bake in preheated oven for 15 to 20 mins.
  9. Once cooled down dust with powdered sugar or sprinkle sugar over the egg washed top before baking.
  10. Cut into your desired shape and serve.

NOTES

  • Simply give an egg wash on the sides before sealing, so that they will seal perfectly when closed
  • The best thing about using Strawberry Jam as a filling is that you can make the pie even when the berries are not in season.
  • You can make this with fresh strawberries, just mix the berries with some sugar and cornflour before filling in.
