As soon as summer vacation set in my brothers kids gave a surprise visit....they were here for almost a week....so with 5 kids in and around the house....made me completely busy.....and the reason for my absence from blogging.
I made this cake and was totally impressed with its texture and how quick and easy it was to make. Infact I made this cake thrice in a row now....I stumbled upon this Betty Crocker recipe here. Now, why did I title the cake as The Never Fail Cake and not The Yellow Cake or The Sponge Cake.....because it came out perfect each time I made it....it did not sink...did not crumble...had the most perfect texture....too perfect....well you can see it for yourself....and lets get baking!!!.

Ingredients:
- 2 1/4 cups all-purpose flour
- 1 1/2 cups sugar
- 1/2 cup/100 gm butter or stick margarine, softened
- 1 1/4 cups milk
- 3 1/2 tsp. baking powder
- 1 tsp. salt
- 1 tsp. vanilla extract
- 3 large eggs
Method:
1. Preheat oven. Grease bottom and sides of 2 round pans with butter and dust flour.
2. Beat all ingredients with electric mixer on low speed 30 seconds, scraping bowl constantly.
3. Beat on high speed 3 minutes, scraping bowl occasionally; pour into pan(s).
4. Bake for 30 to 40 minutes at 180 degree C or until toothpick inserted in center comes out clean or until cake springs back when touched lightly in center.
5. Cool completely on wire rack.
When completely cooled cut into squares and store them for your hungry brats!!!

ReplyDeleteNabeela-thanks a bunch for stopping by....this is the most sought after cake in my house and I make this often as it holds very well for icing...about adding milk you can add half in the beginning and half towards the end...its alright to add more milk (if needed) to get the fluffy batter. Hope this helps.

ReplyDeletethe cake was wonderfull...The only thing is it took 40 minutes more for me to get it bake. I used a pyrex round bowl.was it causing the delay...Does the square metal trays help? Any way it was the first perfect cake which i baked in my microwave oven.

ReplyDeleteThat is because the cake pan was not greased well....next time try lining the cake pan with butter paper (parchment paper) or if you have a nonstick pan...it would save you from the trouble.....hope this helps...thanks for stopping by :)

Made this cake yesterday! So spongy and perfect! Just threw all the ingredients in a bowl and kept my mixer on med-hi until there were no more lumps! So good!!! Even licked the bowl!!

Haritha, two days I guess is okay but it also depend on the climate. To be on the safer side, refrigerate it...you can always bring it to room temp or warm it up.

I tried it but became a great failure. The middle portion is not getting cooked. I baked as per ur direction in microwave oven in convection mode for about 45 minutes. the outer portion turned golden brown but middle portion remained sticky. then i changed to microwave+ convection mode and it turned to cookie. But it was so tasty that kids finished it in no time. I want to know what went wrong? Please give your suggestion

ReplyDeleteHi, pls follow the instructions and bake...heat from both rods is needed, though I am not much aware of the technicalities of an OTG oven :(
