Moringa ela aka drumstick leaves is high in nutrition and available in abundance in Kerala. There is one tree in my backyard and I love to add them in my curries.
I like to use them in my dal curries and they taste perfect with rice or roti.
Ingredients:
Tur dal/Sambar dal: 3/4 cup.
Drumstick leaves: 1 cup.
Tomato: 1, chopped.
Garlic: 3 or 4 cloves, slit finely.
Red chilly powder: 1/2 tsp.
Dried red chilly: 1 or 2, broken.
Cumin seeds: 1/2 tsp.
Asafoitida: A fat pinch.
Turmeric: A fat pich.
Onion: 1/2 chopped
Oil/ghee: 1 tbsp.
Salt to taste.
Method:
Put the cleaned and washed tur dal in a pressure cooker with salt, turmeric, garlic, tomato, and a drop of oil (so that the dal does not spill over). Pressure cook for 2 whistle and turn off the fire.
In the meantime, in a pan add oil or ghee, add cumin seeds and allow it to splutter, add chopped onion and fry for a few min, add asafoitida, red chilly powder, dried red chilly, and the drumstick leaves. Allow the leaves to saute a bit.
Pour this into the dal and mix well.
Serve hot with rice or roti.
