Date Bark Recipe

Date bark recipe, date bark is an easy to make healthy snack to include in your weight loss diet. It's easy to make and does not require any cooking or baking. You just make a layer of dates and top it with the rest of the ingredients and freeze for 30 mins. You could call it as a lazy man's healthy snack. Its that easy.

The taste is similar to that of snicker bar but of course healthy and only 5 ingredients. The best thing about homemade goodies is that you know what's going into the ingredients, which for me is something valuable.

I always try to source high quality ingredients in my recipes because I like to enjoy what I make without any guilt. The recipes I share also is enjoyed by my family and I created Skinny Recipes because I wanted to skin out all the unhealthy fats, processed ingredients etc. So, I take an extra effort to source high quality ingredients....its a very personal choice of mine.

If you are looking for easier ways to make peanut butter I have already shared the recipe. Refer the video below

The ingredients for date bark:

On to a parchment paper, place the dates cut sized down.

When placing the dates, make sure you are overlapping the dates a little.

Once all the 5 rows of dates are done.

Drizzle peanut butter on top, sprinkle peanuts, and spread melted chocolate and spread some more peanuts on top.

Keep in the freezer for 30 mins.

Slice into your desired shapes.

Pidiyum kozhiyum or kottayam style pidi is a traditional knanaya cuisine ; these rice dumpling have a thick gravy like sauce, unlike the dry versions of Malabar kakka roti or kozhi pidi. Knanaya style pidi is served with varutharacha kozhi curry. Traditionally, pidi is associated with baby shower ie when the daughter-in-law is sent to her parents house for delivery, it is customary for the mother-in-law to make kozhi pidi and we knanaya people still follow these traditions. My main aim is to preserve this recipe; so that the future generations can enjoy this wholesome dish. Pidi is rice dumplings which is simmered in water along with shallots, garlic, curry leaves, and coriander seeds; but I have used coriander powder instead to make the whole process easy. Amma mentioned that if using coriander seeds then; the water used to mix the rice flour should be sieved and that using fresh roasted coriander powder saves time. I have made a video recipe and I hope this you help
