Chocolatechip Orange Muffins.

Fall has arrived......

Oranges are my favorite this season...

I love oranges....I know you love them too....

These muffins are soft, light, and have two of my favorite things.......orange and chocolate chips....WOW! They are not dense like cappuccino muffins....they are airy and pillow like.....I think the buttermilk and the orange juice gave that soft texture to the muffins.
Plus these muffins can be easy whipped up....

If you do not have buttermilk please don't think of not baking these oh! so! feather light muffins....you can make buttermilk substitute right in your kitchen and get along with your baking.
*Buttermilk substitute to make 1 cup of buttermilk: In your measuring cup pour 1 tbsp lemon juice or 1 tbsp white vinegar and then add low fat milk ( if you are calorie conscious) to fill the cup. Let it stand for 5 min to curdle.....that's it buttermilk is ready to add to your cakes, cupcake…

Chocolate Yogurt Cake.

Pin It Amma used to make a moist chocolate yogurt/curd cake... Its been a long time since I made this wonderful cake and  made it for Homey's Birthday.


The cake is moist......perfectly chocolatey.....

Ingredients:
All-purpose flour- 2 cups.
Cadbury's cocoa powder: 2/3 cup.
Baking soda: 1 tsp
Baking powder: 1 tsp.
Butter/margarine: 1/2 cup, softened.
Sugar: 1 cup.
Eggs: 2.
Plain yogurt/curd: 1 1/2 cups, lightly beaten.
Vanilla essence: 1 tsp.
1 teaspoon vanilla.
Salt: 1/2 tsp.
Method: 1. Preheat oven to 180 degrees. Grease and flour a 10-inch  pan. Lightly beat yogurt and salt with a spoon and keep aside. 2. In a medium bowl, combine flour, cocoa, baking soda and baking powder. Set aside. 3. In a large mixing bowl, cream butter and sugar. Beat in the eggs one at a time. 4. Alternately add flour mixture and yogurt into butter mixture. Do not over mix. Stir in vanilla. 5. Pour batter into prepared pan and bake for 45 to 55 minutes…

Inji puli/ Ginger Pickle....step by step

Today, I am going to share with you a traditional pickle... my personal Onam favorite...inji puli akka pickled ginger with tamarind.


Inji puli is known in different names such as puli inji, inji curry...its basically a sweet and sour ginger and tamarind pickle...ginger has a vital role in Kerala cuisine...and inji puli is plays an important role in Onasadhya.

Ingredients:
Ginger: 250 gms, sliced.
Shallots: 2 or 3, sliced.
Mustard seeds: 1/2 tsp.
Garlic: 1 pod, sliced.
Kashmiri red chilly: 2 to 3 tsp.
Turmeric: 1/4 tsp.
Tamarind: 1 medium lemon size, soaked in water to extract juice.
Jaggery / brown sugar / plain sugar: 1 tsp.
Gingelly oil.
Salt.

Method:
1. Slice ginger.

2. Take about 1/4 to 1/2 cup of gingelly oil and heat it in a heavy bottomed kadhai. When the oil is hot add the sliced ginger and let it fry in the oil until crisp. I did it in two batches.

I know..I know.. I had posted butter chicken...so you must be wondering why another butter chicken....this is chicken butter masala...a simple but elegant dish....which needs no yogurt marinating....no cream....no butter (any vegetable oil will do wonders; of course if you are not on a diet and too skinny go ahead and add plenty of butter).... this is the ONE chicken dish I often make when guests come over. This goes with fried rice, carrot rice, plain rice, methi rice, whole wheat roti, phulka, naan......hmmm with just about anything.
