Chocolate Brownie:

I know its been a while since I posted something…….with onam holidays and kids at home kept me on the toes 24/7. I made a chocolate brownie for Homey’s birthday and thought I will share it. Its amma’s age old recipe, it has curd and soda powder in it. As it was hubby dear’s birthday I topped it with chocolate satin icing, cashew nuts, and chocolate noodles. This is easy to make if using an egg beater.

Ingredients:

2 cups: All purpose flour.
½ tsp: Soda powder.
½ cup: Cocoa powder.
½ cup: Milk.
100 gm: Butter.
1 1/2 cup: Powdered sugar.
4: Eggs.
½ cup: Curd.
½ cup: Chopped cashew nuts.

Method:

1.      Cream butter and powdered sugar with an egg beater.
2.      Add egg yolk one by one and beat on low speed.
3.      Add curd to this and beat on low speed.
4.      Mix all purpose flour with soda powder and cocoa powder and fold in this into the cream mixture alternating with milk till is soft and fluffy.
5.      Fold in the nuts and mix gently. Pour into a greased baking tray and bake till done.

SATIN CHOCOLATE ICING:

SUGAR: 1 CUP.
MILK: 1/2 CUP.
COCOA POWDER: 3 TBSP.
BUTTER: 1 TBSP.

Put sugar, milk, and cocoa powder and bring it to boil and stir. Mix till leaves the sides of the pan or coats the back of the spoon. Add butter, stir for sometime. Let it cool. Pour it on top of cake.Decorate.

The best thing about this puff pastry recipe is that; it does not need any refrigeration (chilling the dough) or any other so called difficult method, you may see when you google for "puff pastry" Easy puff pastry can be made with the most basic ingredients and in under 15 minutes. Back in the 80's amma started making puffs at home; which my two brothers and myself used to enjoy a lot. She mostly used to make this for special occasions; like when a friend dropped in or when we long for something bakery style. Fast-forward to 2014; my daughter, Nidhi loves puffs and I have been asking amma to teach me how to make and somehow things did not work out when I last visited her. Right now she is visiting us here in Calicut and I coaxed and buttered her to show me how to make puffs. The
