Mixed Vegetable Dosa/Rice Crepes.....step by step.

I have been playing around with my dosa batter (like the egg dosa, the good old masala dosa) and found many innovative ways to make it more healthy (ofcourse dosa is one of the healthiest and balanced food in the world), but sometimes my kids do not have much veggies in their diet. Since both of them love dosa, (I always have dosa batter stocked up in my refrigerator). This is another way of making them start a healthy day and away from the usual dosa and sambar for a change.

My kids do not like chunks of veggies in their plate, so I just put vegetables in the food processor and mince them very finely and add them into the dosa batter. There is no actual amount of vegetables to be minced; just some carrots, onion, tomato, capsicum etc will be fine.

And no, this does not take your valuable time in the morning, just chop the vegetables coarsely, and plop them in your food processor, and pulse that's all.

An Update:
If you are using a nonstick pan omit the oil entirely, but make sure to grease the tawa.Ingredients:
Dosa batter: 1 cup.
Mixed vegetables minced: 1/2 cup or even more.
Vegetable oil/ghee: 1/4 tsp to drizzle.
A hot and greased iron tawa.
You will need some carrots, onion, 1/4 piece of cabbage, 1 green chilly, 1 capsicum, and 1 tomato. You can add more vegetables of your liking.

Simply chop them coarsely..

Just pop them in your food processor and pulse for a minute...

Put 1/2 to 1 cup of the mince into the dosa batter and mix well.

Pour 1 1/2 ladle full of the mixed vegetable dosa batter and spread into the hot and greased iron tawa. Simmer the fire.

Drizzle 1/4 tsp of vegetable oil or ghee.....still on low flame.....let it stay for 1 min.

Flip to the other side....let it sit on the tawa for another minute.

Serve hot with pickles or chutneys.....or even tomato sauce.....

Vattayappam / Steamed Rice Cake / Kerala Style

Vattayappam is Kerala's own fermented SteamedRice Cake. One of the healthiest traditional tea time snack with almost no oil. It is popular in the Christian communities of Kerala, though not much popular in North Kerala/ Malabar.

 "Vatta" means "round" ......vattayappam is basically rice and coconut grinded together and fermented with is very soft and pillowy.....a slightly sweet snack......these days, it has found its place in bakeries especially in Kochi and Kottayam...and when I got a request from an anonymous reader asking for vattayappam recipe...I thought of sharing the it is very easy to make...and does not take much time to make. I usually make it as an after school snack as it is very healthy and filling for kids.
