How to make Pre-cooked Rotis/Chappathi.



Chappathi or Roti is an essential part of Indian diet. Homemade whole wheat roti is the best, though sometimes  we do not get time to make roti or might be too tired to make roti and might opt for store- bought ones.  So, suppose you can make ahead these rotis, it would be awesome right?? and if you have some tucked away in the fridge....all you have to do is just heat them up and ta-da- hot soft rotis are ready!

My husband and kids love to have hot steaming phulkas or roti and I always make sure I have some precooked rotis in the refrigerator ....just in case.

Precooked rotis are just partially cooked and cooled to room temperature and covered in a napkin/cloth and  it will keep for up to 4 days in the refrigerator longer in the freezer. So, often I half cook the roti and store away for later use, especially when there are guests coming over....all I have to do is heat the tawa and complete the cooking.

So, today I am sharing how I partially cook my rotis and store....working women and mommies this is for you.

I will begin with once you have rolled out the dough for the roti, please refer to my flat bread/roti post for making the dough.

Heat a tawa or iron skillet pan. Put the fire on low flame, and place the rolled out flat bread/roti on it....for 30 to 50 seconds.

Then flip it over....again let it stay for 30-50 seconds.

Look closer...we are just partially cooking the roti/flat bread....so no brown spots are there.

Like wise make all the roti. Allow it to come to room temperature and then wrap in a clean napkin.


And store in a container .....and refrigerate.

AND when you feel like having hot soft rotis....just heat the tawa and again cook them on both sides.

Or you can make Phulka.....Oil free roti is ready!

  1. What a nice idea!!! Yes, perfect for dinner parties or for everyday dinner even...Its otherwise a bit of a hassle to make chapathiss everyday..But making them in larger quantities to can make it hard the next day..But your way is perfect..

  5. I've never tried chilling rotis ahead of prepping, great idea for hosting parties! Would it be possible to freeze them, any idea?

Nash-Actually this idea has been passed on by a Coorgi friend who lived in her plantation and only once a week her maid/cook comes...and she makes sure that she has enough pre cooked roties to last a week....since then I also started doing this...she told me at that time that you could freeze it...though I have not tried it. Hope this helps.

  13. as a working mom these precooked refrigerated chappaties are a blessing.i have recently started storing my rotis like this but my second batch turned out hard on recooking on tawa.what am i doing wrong can u plz help.p.s.i an using whole wheat chakki ka atta without refined flour and with husk.

Hi Anon!! about your query, I would suggest you to precook them, allow it to come to room temp, wrap them in a kitchen towel and refrigerate....and just before serving heat a grilled pan or tawa and heat the roti up...a drizzle of ghee or butter will intensify the flavor....though I am not sure of microwave.....I do not use it!! I am very old fashioned when it comes to microwave cooking...hope this helps....thank you for stopping by..

  16. Nice idea. Good for housewives whose husbands are demanding hot rotis every time :) I prefer cooking the half cooked chapatis on a skillet to cooking them in a microwave.

  17. Hi! I like the idea of pre-cooked chapatis. But Im not sure if I cook will be able to cook them partially or will I go wrong and cook them more than required and the rotis might not turn out as soft....

    Is it possible to freeze uncooked, raw rolled out chapatis?? So I can cook them only at the time I wanna use them?

Hi Anon, it is not possible to freeze rolled out uncooked roti....and that is why I use this method....just a few seconds on each side of the roti on a hot tawa or nonstick tawa would be fine.....when reheating a dash of ghee/butter/oil spread on the hot roti...will make it more softer or even puffing them directly on the flame would work wonders....pls refer to my phulka or flatbread post for more on that....hope this helps!
