Birthday Cake....Reclaimed!!!

Yesterday, December 1st was my son's 11th birthday and I made butter cake.....

He celebrated his big day with his close friends plus his cousins, who came all the way from Trivandrum (9 hour journey by train) along with my mom....and the kids had a wonderful time. I made chicken fried rice and chilly chicken and some snacks for lunch and then after a some games and fun, they all gathered around for the cake.....and then the disaster...

Now the disaster, while I was transferring the cake, it fell off from my hand into the counter sideways and the whole icing collapsed.....all I could hear was screams, oohs and aahs.....I was kinda smiling....and the party was about to begin....somehow I transferred the cake into another plate....scooped all the icing into a piping bag ....

The result.

And everybody heaved a relief :) the party was  back ON!

And by the way, I sandwiched the cake with chocolate buttercream icing, then drizzled with caramel sauce.

Then covered with vanilla buttercream...

And put the vanilla buttercream and chocolate buttercream into a piping bag and swirled some stars..... and chocolate chips to brighten.....

    1. Aneeta, I use Amul cream though it is low fat, I try to take cream which has come up on the top, do not shake the carton.

  9. Aneeta, thanks for the visit. The icing was just simple buttecream: 1 cup butter, 2.5 cups of p sugar, 1 tsp vanilla, 3tbsp heavy cream: cream butter and sugar until fluffy, add heavy cream and cream again; sometimess a little more of P sugar is needed to make it into stiff peaks..just add accordingly the cream and sugar...to make it chocolate add 1/2 cup cocoa powder while creaming...hope this helps.

  10. Thanks for the recipe..But my trials to make whip cream with Amul cream was a failure..It didn't form any peaks as I see in the recipes..I guess usually most of them use ready made whipped cream, which they just have to beat a bit before using..Correct me if I am wrong pls..Also could you share the cake recipe too?

    Regards,
    Aneeta

    1. Aneeta-Whipping up Amul cream is difficult because it is low fat; have you tried whipping it up over a bowl of ice cubes. But for this icing you need not whip the cream, what I do is, I do not shake the carton and let it sit in fridge overnight , so the thick cream comes on the top and I just scoop it out to add it to the final stage of creaming the icing, you can also add milk instead of cream, but I prefer cream. I will share the recipe, can u pls give me ur mail id, so that i can send the recipe. You can send ur mail id at contactnisahomey@gmail.com or comment here.

Pidiyum Kozhiyum Recipe - How To Make Kerala Style Kozhi Pidi - Kerala Recipes

Pidiyum kozhiyum or kottayam style pidi is a traditional knanaya cuisine ; these rice dumpling have a thick gravy like sauce, unlike the dry versions of Malabar kakka roti or kozhi pidi. Knanaya style pidi is served with varutharacha kozhi curry. Traditionally, pidi is associated with baby shower ie when the daughter-in-law is sent to her parents house for delivery, it is customary for the mother-in-law to make kozhi pidi and we knanaya people still follow these traditions. My main aim is to preserve this recipe; so that the future generations can enjoy this wholesome dish. Pidi is rice dumplings which is simmered in water along with shallots, garlic, curry leaves, and coriander seeds; but I have used coriander powder instead to make the whole process easy. Amma mentioned that if using coriander seeds then; the water used to mix the rice flour should be sieved and that using fresh roasted coriander powder saves time. I have made a video recipe and I hope this you help
