Tandoori Chicken Sandwich.

With the weather so hot, my kids wanted something to make them cool, and thus tandoori chicken sandwich was born, which my kids gave a high was that good. Summer is the best time to have cold sandwich, salads and ice-creams.

Both my kids are at home enjoying summer vacations, two months break from studies and routines...with Homey out of the house by 9 in the morning, kids and myself have the rest of the day for ourselves....until Homey comes back from means they are always-hungry!! lol.

This is the best way to add veggies to your kids diet/sandwich....I used light mayo and cheese to make it skinny...also, I used plain white bread, but you can also use brown bread to make it more healthier.

Author: Nisa Homey.
Makes two sandwich
Bread: 4 slices, preferably day-old bread.
Tandoori Chicken: 2 or 3 pieces, shredded.
Cheese slice: 2.
Mayonnaise: 1 tsp.
Plain yogurt: 1 tsp.
Pepper powder: 1 tsp.
Lime juice: Juice of 1 lime.
Carrot: 1, chopped.
Cucumber/Zucchini: 1, chopped.
Capsicum: 1/2 chopped.
Green onions: 3 sprigs, chopped (or 1/2 onions chopped).
Tomato: 2 slices.
Capsicum: 2 slices.
Salt as needed.

I used my food processor to chop up the veggies.

Then I mixed 1 tsp mayo, 1 tsp plain yogurt, salt, and juice of 1 lemon. I mixed the veggies into it, added the pepper powder. Lastly add the shredded tandoori chicken.

Mix everything really well. At this stage, you can chill this for 10 min or so.....I did not chill while making this.

Take one slice of bread, place the cheese slice on top.

Top it with the mix.....I took about 3 tbsp....spread it.

I also topped it with one thin slice of tomato and capsicum. Repeat the same with another slice.
You can have this as an open sandwich or can close it with another slice of bread....I did have some left over dressing, which I refrigerated and used up the next day. Kids will defiantly ask for its better you have some left over dressing :)

This sandwich is so easy to make.... if you already have left over tandoori chicken.

The best thing about this puff pastry recipe is that; it does not need any refrigeration (chilling the dough) or any other so called difficult method, you may see when you google for "puff pastry"

Easy puff pastry can be made with the most basic ingredients and in under 15 minutes.

Back in the 80's amma started making puffs at home; which my two brothers and myself used to enjoy a lot. She mostly used to make this for special occasions; like when a friend dropped in or when we long for something bakery style.

Fast-forward to 2014; my daughter, Nidhi loves puffs and I have been asking amma to teach me how to make and somehow things did not work out when I last visited her. Right now she is visiting us here in Calicut and I coaxed and buttered her to show me how to make puffs.

The first time she tau…

Vattayappam / Steamed Rice Cake / Kerala Style

Vattayappam is Kerala's own fermented SteamedRice Cake. One of the healthiest traditional tea time snack with almost no oil. It is popular in the Christian communities of Kerala, though not much popular in North Kerala/ Malabar.

"Vatta" means "round" ......vattayappam is basically rice and coconut grinded together and fermented with is very soft and pillowy.....a slightly sweet snack......these days, it has found its place in bakeries especially in Kochi and Kottayam...and when I got a request from an anonymous reader asking for vattayappam recipe...I thought of sharing the it is very easy to make...and does not take much time to make. I usually make it as an after school snack as it is very healthy and filling for kids.

Ah yes, like always this is amma's recipe. It is her signature, no-fail recipe. of caramel custard.

Okay lets talk about this pudding!!  I used 4 eggs because amma said so eggs are the show stopper here :) is needed to make the pudding silky-satin, and stand tall....and yes it will not you may wonder....won't this be eggy!!smelly!! I promise it won't....there wouldn't be too much eggy flavor! caramel flavor can do wonders!! Believe me!!

I am using my steamer or appachembu as it is known locally to cook the pudding. While the pudding is steaming, it is important that once steam comes, …
