Apple Pudding

Quick apple pudding with instant custard as a base, topped with stewed juicy apples.

I have had some guests over the weekend, and I made this quick and easy apple pudding. I had not planned to make this pudding, it sort of just happened!! Everybody wanted something sweet as a dessert, and since there were plenty of apples in the fruit basket, I thought of making something with them..... and when I saw the custard powder mix packet in the pantry.....I thought why not make a pudding!!

I peeled, cored, and diced the apples and added a dollop of butter in a pan and stewed the apples with sugar, little water,  and cinnamon and boy!! the whole house smelled heaven.

Some apple recipes: Rustic apple tart, Apple dump cake, Cinnamon poached apples.

Author: Nisa Homey.
Serves: 6-7.
Ingredients:
Apples: 4 to 5 medium.
Sugar: 1/4 cup.
Water: 2-3 tbsp
Lemon juice: 1 1/2 tsp.
Butter: 1 tbsp.
Cinnamon powder: 1/2 tsp
Custard powder: 3 to 4 tbsp.
Milk: 500 ml.

Method:
I took about 5 apples.

And peeled, cored, and cubed them.

Heated a pan with a generous dollop of butter.

Dunk in the apples, sugar, and water (if the apples are very sweet, reduce a tbsp of sugar)

Add the cinnamon powder

Cook/stew the apples.....when done, switch off the fire and add in lemon juice and mix well...keep aside.

Make vanilla custard with 500 mil milk as per the directions on the cover of the custard powder. Allow it to cool to room temp. Pour it into the pudding dish.
Brown Polson Custard Powder Vanilla - 500 gms

Allow it to set in the refrigerator for 10 minutes and then take out and top it with the stewed apples. Keep back in the fridge.

Serve chilled with a sprinkle of cinnamon sugar.

We all the enjoyed this quick and easy pudding....and I hope you will too.

Pidiyum Kozhiyum Recipe - How To Make Kerala Style Kozhi Pidi - Kerala Recipes

Pidiyum kozhiyum or kottayam style pidi is a traditional knanaya cuisine ; these rice dumpling have a thick gravy like sauce, unlike the dry versions of Malabar kakka roti or kozhi pidi. Knanaya style pidi is served with varutharacha kozhi curry. Traditionally, pidi is associated with baby shower ie when the daughter-in-law is sent to her parents house for delivery, it is customary for the mother-in-law to make kozhi pidi and we knanaya people still follow these traditions. My main aim is to preserve this recipe; so that the future generations can enjoy this wholesome dish. Pidi is rice dumplings which is simmered in water along with shallots, garlic, curry leaves, and coriander seeds; but I have used coriander powder instead to make the whole process easy. Amma mentioned that if using coriander seeds then; the water used to mix the rice flour should be sieved and that using fresh roasted coriander powder saves time. I have made a video recipe and I hope this you help
