Cinnamon Poached Apples

Cinnamon poached apples is a light dessert topping that can be served chilled or warm. A very lightly cinnamon spiced apple stewed in light sugar syrup.

During a casual chat with my cousin Lizbeth, she told me that she just poached some apples to serve on ice cream.....and since I had some apples grinning back at me in my fruit basket...in no time, I was in my kitchen making cinnamon poached apples....cinnamon I love ya!!

Recipe Source: Lizbeth Renjith
Author: Nisa Homey
Ingredients:
Apples: 3-4, peeled, cored, and quartered.
Cinnamon: 1 stick.
Water: 1 1/2 cup.
Sugar: 3-4 tbsp.

Method:
I used three medium sized apples....that batch had a small cute apple...so I added it too.

Peel, cored, and quarter the apples....I left the small one as it is. Put them into a pan....add about 1 1/2 cup water...water should cover the apples. Add a cinnamon stick.

Add 3-4 tbsp of sugar.

Put the pan on stove and once it starts to boil, simmer the fire and close with a lid....so that the apples get cooked.....after it is cooked you can remove the lid....and let it simmer...till the water is reduced to 1/4 and all syrupy. It took some 20 minutes for me on low flame.

Top it on ice creams or puddings! Make sure you drizzle the syrup over it too.

I topped the ice cream with warm poached apples and drizzled with warm syrup....and my ice cream melted pretty fast.

Enjoy, this light cinnamon flavored poached apple.

Notes: You can add a few more tablespoons of sugar if you like more sugar.
Left overs can be refrigerated.
If you plan to make with small apples, you can peel them with stem on and pierce them with a fork...so that the syrup gets into the apples.
You can also add juice of half a lemon and vanilla beans for that extra punch...but ofcourse it is a personal choice...feel free to experiment.

Pidiyum Kozhiyum Recipe - How To Make Kerala Style Kozhi Pidi - Kerala Recipes

Pidiyum kozhiyum or kottayam style pidi is a traditional knanaya cuisine ; these rice dumpling have a thick gravy like sauce, unlike the dry versions of Malabar kakka roti or kozhi pidi. Knanaya style pidi is served with varutharacha kozhi curry. Traditionally, pidi is associated with baby shower ie when the daughter-in-law is sent to her parents house for delivery, it is customary for the mother-in-law to make kozhi pidi and we knanaya people still follow these traditions. My main aim is to preserve this recipe; so that the future generations can enjoy this wholesome dish. Pidi is rice dumplings which is simmered in water along with shallots, garlic, curry leaves, and coriander seeds; but I have used coriander powder instead to make the whole process easy. Amma mentioned that if using coriander seeds then; the water used to mix the rice flour should be sieved and that using fresh roasted coriander powder saves time. I have made a video recipe and I hope this you help
