Baked Chocolate Fudge For Two

Baked chocolate fudge for two is the best way to end a romantic evening, topped with vanilla ice cream and bursting with chocolate is one of the best dessert I ever had!

Baked Chocolate Fudge

Baked fudge in all of its gooey chocolate glory has been downsized to just two servings, yeah! no second helpings at all....and easy way to satisfy my chocolate craving.

Its not a brownie and definitely not a cake......it lies somewhere between both!

The plus point for desserts for two.....is that you have the whole serving for yourself.....and you are not expected to share...well, I am a bit selfish with my chocolate desserts.

Downsizing is my latest fad, atleast when I am on a diet.....and weekend dessert binges can wreak havoc on my diets, so downsizing desserts works well.....and the plus point is no leftovers.

I made this baked fudge for just the two of us! It was perfect!

This dessert can be doubled or even tripled. The beauty of this baked fudge is that it has a crusty top with a sort of gooey chocolately interior....and it was so YUM!

You really do not need to wait for Valentines day to make this special dessert....a weekend would be perfect! Bachelors are you listening?

Cooking Time: 30-40 min.
Preparation Time: 5 to 10 min
Serves two.
Ingredients:
Butter: 50 gms, melted (1/2 stick).
Egg: 1
Sugar: 1/2 cup.
Cocoa Powder: 1 tbsp, heaped.
Flour: 1 tbsp, leveled.
Vanilla extract: 1/2 tsp.
Salt a big fat pinch.
Serving Suggestions: A scoop of vanilla ice cream or sweetened whipped cream.

Method:
Melt butter and keep aside.
Line two ramekins and keep aside. Preheat oven to 180 degree C.
Beat the eggs until light in color.

Add half cup sugar and beat until combined.

Add in 1 heaped tbsp cocoa powder, 1 tbsp leveled flour, salt, vanilla, and melted butter.

Mix gently, until combined. Pour into greased ramekins. Place them in another large pan half way full of water....and bake them for 30- 40 min or until upper crust is crispy and the rest of the batter is firm but not fully set.

I served with a scoop of vanilla ice cream.
Baked Fudge For Two

Some tips:
If you feel it has not set well, nothing to worry just pop them right back into the oven for another 10 min or so.
This does not rise, so I never have any qualms pouring the batter to almost the brim.
You can also bake in a mason jar; just make sure that it is of high quality and it can withstand the heat. One of the best ways to gift baked fudge.

Pidiyum Kozhiyum Recipe - How To Make Kerala Style Kozhi Pidi - Kerala Recipes

Pidiyum kozhiyum or kottayam style pidi is a traditional knanaya cuisine ; these rice dumpling have a thick gravy like sauce, unlike the dry versions of Malabar kakka roti or kozhi pidi. Knanaya style pidi is served with varutharacha kozhi curry. Traditionally, pidi is associated with baby shower ie when the daughter-in-law is sent to her parents house for delivery, it is customary for the mother-in-law to make kozhi pidi and we knanaya people still follow these traditions. My main aim is to preserve this recipe; so that the future generations can enjoy this wholesome dish. Pidi is rice dumplings which is simmered in water along with shallots, garlic, curry leaves, and coriander seeds; but I have used coriander powder instead to make the whole process easy. Amma mentioned that if using coriander seeds then; the water used to mix the rice flour should be sieved and that using fresh roasted coriander powder saves time. I have made a video recipe and I hope this you help
