Mango Juice / How To Make Mango Juice

Mango Juice, mangoes are the best thing about summer! Homemade mango juice tops the list of summer drinks, I mean who wouldn't love a tall glass of iced mango juice to cool down. Sometimes, I'd like to serve Mango Milk Shake to my kids with a bit of mango chunks thrown it for added surprise....but when it comes to Mango Juice, I like to serve it chilled. Have you tried Mango Mouse, Mango Ice Cream, Mango Ice Cubes, and Mango Curry yet?

Some days back, I shared how to freeze mango puree/pulp which I have been doing for a long time. I stack my freezer with mango puree, so that we could enjoy mangoes even when the season is over. I'd like to share this particular mango juice which has been made by that puree by adding water and topped with ice cubes. Some of you asked for the reason for adding sugar and like I mentioned in the comments, it is to improve flavor and help stabilize color and also use it for making juice or even in desserts.... I mean that makes it easy....there is no need to to thaw the puree to add sugar! you just have to plop some puree in a glass and add water....mix it really well....and ta! da! Mango Juice is ready! and the best thing is you can enjoy even after mango season is over....

I'd like to squeeze in a bit of lime juice or squeeze in a bit of orange juice for an extra flavor....have you tried
adding crushed mint leaves in the juice?? Well, I have and it is awesome!!...you should try it too.

Author: Nisa Homey.
Serves: One.
Preparation Time: 3 min.
Ingredients:
Pull out the mango goodness from the freezer, I mean frozen mango puree.

Scoop out 2 or 3 tbsp of the frozen puree. Add water, stir for a min or two....top with ice cubes! Easy Mango Juice, just for you to chill! psst! please remind yourself to make mango puree ASAP!

Enjoy!! and Don't Share! This is just for YOU :)

NOTE: This post is mainly to show you that juice with frozen mango puree is as good as fresh juice. No excuse if you live in Kerala, you should  make some and freeze. The color of the puree depends on the variety of the mangoes, if it is very fibrous blend in high speed for longer time.

P.S: With a container full of mango puree you can make so many mango recipes....especially when mangoes are not in season!

Pidiyum Kozhiyum Recipe - How To Make Kerala Style Kozhi Pidi - Kerala Recipes

Pidiyum kozhiyum or kottayam style pidi is a traditional knanaya cuisine ; these rice dumpling have a thick gravy like sauce, unlike the dry versions of Malabar kakka roti or kozhi pidi. Knanaya style pidi is served with varutharacha kozhi curry. Traditionally, pidi is associated with baby shower ie when the daughter-in-law is sent to her parents house for delivery, it is customary for the mother-in-law to make kozhi pidi and we knanaya people still follow these traditions. My main aim is to preserve this recipe; so that the future generations can enjoy this wholesome dish. Pidi is rice dumplings which is simmered in water along with shallots, garlic, curry leaves, and coriander seeds; but I have used coriander powder instead to make the whole process easy. Amma mentioned that if using coriander seeds then; the water used to mix the rice flour should be sieved and that using fresh roasted coriander powder saves time. I have made a video recipe and I hope this you help
