Mango Ice Cubes.

Mango Ice Cubes---As a kid I used to love mango ice cubes so much that during summer vacations, I used to sneak behind my cousins to the kitchen and slip away with this melt-in-the mouth-cooler....

Kerala, is blessed with mangoes....you name the variety, our backyards have it.....I remember getting up early morning and racing to the backyard mango tree or "mavu" in Malayalam.....the sturdy cousin will climb up the tree and shake a branch while the impatient ones will try to do his part with a long stick or "thotti" and the greedy ones like me will pounce on the ones that fall down....it was raining mangoes for us!

Amma used to make jams, jellies, mango fruit leather, squashes, puddings, ice-creams, fresh juice, and ice cubes.....she used to stock this in the freezer and when a thirsty kid drop by her kitchen, she would make a smoothie....instant one! ...the best part is no mango to peel....just 3 cubes into the blender with 1 cup of chilled milk and 3 tbsp of sugar and blitz away.....amazing mango smoothie to chill you out...I'd say wow!

Childhood summer vacation stories are endless, my achachen's house is beside Meenachil River (Arundathi Roy gave life to the river in "God of small things")....and the fun and frolic I had during summer hols still make me smile and hum a song......my kids, unfortunately are city bred, living in a 1100 sq ft apartment are not so fortunate....though they listen attentively to my stories of the 70s and 80s.

When Homey bought two Alphonso mangoes; I just breathed in the flavor and made this mango ice cubes for my kids.....and for me just to rewind.

Recipe Source: Amma.
Author: Nisa Homey.
Ingredients:
Manogoes: 2, medium sized, peeled and cut into cubes.(I used alphonso mango)
Sugar: 2/3 cup (increase or decrease depending on the sweetness of the mango).
Lemon Juice: Juice of one lemon.

Method
Put everything in the blender and blend for a min or two.
Pour into ice cube tray.
Freeze overnight.

I love to put one cube into my mouth and allow it to slowly melt in....the sweet and sourness of mangoes is a delight for my tastebuds.

Try this the next time you get a fleshy sweet mango....use it in smoothies, ice-creams, puddings.....

Making mango shakes is almost everyone's favorite thing to do when it is mango season. It is best made with original mangoes.

  11. Hi Nisa, I am Maniha here, I had my queries on mango puree nd I am sitting with almost 12-15 kgs of mangoes.

instead of blending in a food processor, would it be OK just to hand blend with back of a spoon. I do it this way. Is the texture different if using an electric blender.

I also have a question on Mango Juice. You have added lime juice also. Is it lime or lemon (nimbu) or sweet lime (mousambi - large green skin coloured).

    Thanks....... manisha

    1. Its Nimbu which I used....I think using blender helps since you have lots of mangoes...it will speed up the process...hope this helps!

Pidiyum Kozhiyum Recipe - How To Make Kerala Style Kozhi Pidi - Kerala Recipes

Pidiyum kozhiyum or kottayam style pidi is a traditional knanaya cuisine ; these rice dumpling have a thick gravy like sauce, unlike the dry versions of Malabar kakka roti or kozhi pidi. Knanaya style pidi is served with varutharacha kozhi curry. Traditionally, pidi is associated with baby shower ie when the daughter-in-law is sent to her parents house for delivery, it is customary for the mother-in-law to make kozhi pidi and we knanaya people still follow these traditions. My main aim is to preserve this recipe; so that the future generations can enjoy this wholesome dish. Pidi is rice dumplings which is simmered in water along with shallots, garlic, curry leaves, and coriander seeds; but I have used coriander powder instead to make the whole process easy. Amma mentioned that if using coriander seeds then; the water used to mix the rice flour should be sieved and that using fresh roasted coriander powder saves time. I have made a video recipe and I hope this you help
