Mango Ice Cubes.

Mango Ice Cubes---As a kid I used to love mango ice cubes so much that during summer vacations, I used to sneak behind my cousins to the kitchen and slip away with this melt-in-the mouth-cooler....

Kerala, is blessed with mangoes....you name the variety, our backyards have it.....I remember getting up early morning and racing to the backyard mango tree or "mavu" in Malayalam.....the sturdy cousin will climb up the tree and shake a branch while the impatient ones will try to do his part with a long stick or "thotti" and the greedy ones like me will pounce on the ones that fall down....it was raining mangoes for us!

Amma used to make jams, jellies, mango fruit leather, squashes, puddings, ice-creams, fresh juice, and ice cubes.....she used to stock this in the freezer and when a thirsty kid drop by her kitchen, she would make a smoothie....instant one! ...the best part is no mango to peel....just 3 cubes into the blender with 1 cup of chilled milk and 3 tbsp of sugar and blitz away.....amazing mango smoothie to chill you out...I'd say wow!

Childhood summer vacation stories are endless, my achachen's house is beside Meenachil River (Arundathi Roy gave life to the river in "God of small things")....and the fun and frolic I had during summer hols still make me smile and hum a song......my kids, unfortunately are city bred, living in a 1100 sq ft apartment are not so fortunate....though they listen attentively to my stories of the 70s and 80s.

When Homey bought two Alphonso mangoes; I just breathed in the flavor and made this mango ice cubes for my kids.....and for me just to rewind.

Recipe Source: Amma.
Author: Nisa Homey.
Ingredients:
Manogoes: 2, medium sized, peeled and cut into cubes.(I used alphonso mango)
Sugar: 2/3 cup (increase or decrease depending on the sweetness of the mango).
Lemon Juice: Juice of one lemon.

Method
Put everything in the blender and blend for a min or two.
Pour into ice cube tray.
Freeze overnight.

I love to put one cube into my mouth and allow it to slowly melt in....the sweet and sourness of mangoes is a delight for my tastebuds.

Try this the next time you get a fleshy sweet mango....use it in smoothies, ice-creams, puddings.....

    What a refreshing drink!
Making mango shakes is almost everyone's favorite thing to do when it is mango season. It is best made with original mangoes.

  12. Hi Nisa, I am Maniha here, I had my queries on mango puree nd I am sitting with almost 12-15 kgs of mangoes.

instead of blending in a food processor, would it be OK just to hand blend with back of a spoon. I do it this way. Is the texture different if using an electric blender.

I also have a question on Mango Juice. You have added lime juice also. Is it lime or lemon (nimbu) or sweet lime (mousambi - large green skin coloured).

    Thanks....... manisha

    1. Its Nimbu which I used....I think using blender helps since you have lots of mangoes...it will speed up the process...hope this helps!

Puff Pastry Recipe - Homemade Puff Pastry

Puff pastry recipe: Homemade puff pastry in 15 minutes, can you believe that??  Bakery style Puff pastry is so easy to make at home that you will never buy greasy bakery puffs. The best thing about this puff pastry recipe is that; it does not need any refrigeration (chilling the dough) or any other so called difficult method, you may see when you google for "puff pastry"

Easy puff pastry can be made with the most basic ingredients and in under 15 minutes.

Back in the 80's amma started making puffs at home; which my two brothers and myself used to enjoy a lot. She mostly used to make this for special occasions; like when a friend dropped in or when we long for something bakery style.

Fast-forward to 2014; my daughter, Nidhi loves puffs and I have been asking amma to teach me how to make and somehow things did not work out when I last visited her. Right now she is visiting us here in Calicut and I coaxed and buttered her to show me how to make puffs.

The first time she tau…

Caramel Pudding Recipe - Caramel Custard Recipe

Caramel pudding recipe; a delicious traditional dessert with creamy caramel over silky custard. Caramel custard is my favorite pudding.

All through my childhood, amma makes caramel pudding as a Sunday special.....achachen (my dad) love only this pudding...... 42 years of serving caramel pudding to him has made amma, a sort of an authority on caramel pudding recipe! Ah yes, like always this is amma's recipe. It is her signature, no-fail recipe. of caramel custard.

Okay lets talk about this pudding!!  I used 4 eggs because amma said so eggs are the show stopper here :)......it is needed to make the pudding silky-satin, and stand tall....and yes it will not crumble.....now you may wonder....won't this be eggy!!smelly!! I promise it won't....there wouldn't be too much eggy flavor! caramel flavor can do wonders!! Believe me!!

I am using my steamer or appachembu as it is known locally to cook the pudding. While the pudding is steaming, it is important that once steam comes, …

Vattayappam / Steamed Rice Cake / Kerala Style

Vattayappam is Kerala's own fermented SteamedRice Cake. One of the healthiest traditional tea time snack with almost no oil. It is popular in the Christian communities of Kerala, though not much popular in North Kerala/ Malabar.

"Vatta" means "round" ......vattayappam is basically rice and coconut grinded together and fermented with yeast....it is very soft and pillowy.....a slightly sweet snack......these days, it has found its place in bakeries especially in Kochi and Kottayam...and when I got a request from an anonymous reader asking for vattayappam recipe...I thought of sharing the recipe...as it is very easy to make...and does not take much time to make. I usually make it as an after school snack as it is very healthy and filling for kids.
